Hospitality Management Short Courses

The hospitality sector remains vibrant and progressive. Greater emphasis is now being placed on quality service provision, with competent management, in this sector.

Delegates are exposed to contemporary hospitality management techniques. The courses impart practical knowledge of hospitality concepts, practices and management techniques, to allow more effective work in the sector.

The courses are designed for managers, as well as other professionals currently employed, or wishing to be employed, within the hospitality industry. The courses allow delegates to update their knowledge and learn new or improved techniques for effective management within the hospitality field.

HMM11: Hospitality Principles and Practice
Topics covered include:
• Basic hospitality principles and practices
• Core hospitality operations
• Hospitality production and procurement considerations
• Financial aspects of hospitality provision
• Hospitality accounting
• Hospitality talent and performance management
• Legal and insurance issues
• Quality management issues and considerations
• Continuous enhancement Hospitality Quality Circles
Duration: The course features twice weekly synchronous online sessions (2 hours per session), over a 6-week period (24 hours total course contact duration).

HMM12: Hospitality Operations and Finance
Topics covered:
• The economics of hospitality
• Hospitality business models
• Food and beverage management
• Costing food and beverage services
• Managing hospitality resources
• Budgeting and financial forecasting for Hospitality
• Hospitality cost control considerations
• Revenue management
• Front and back office operations management
• Service levels, staffing and scheduling considerations
• E-Commerce for hospitality
• Maintenance planning

Duration: The course features twice weekly synchronous online sessions (2 hours per session), over a 6-week period (24 hours total course contact duration).

HMM13: Marketing for Hospitality
Topics covered:
• Marketing research and planning fundamentals
• Strategic marketing issues for hospitality
• Marketing intelligence for the hospitality sector
• Marketing analysis frameworks
• Effective marketing communications
• Hospitality consumer behavior
• Consumer behavior models for the food and hospitality industry
• Developing sustained competitive advantage for in hospitality
• Cultural aspects of marketing for hospitality
• Hospitality marketing cycles
• Targeting and segmentation considerations
• Brand management issues

Duration: The course features twice weekly synchronous online sessions (2 hours per session), over a 6-week period (24 hours total course contact duration).

The courses are delivered via instructor-led online sessions. Emphasis is placed on the use of topical case studies and relevant simulations to impart practical knowledge and hospitality management expertise. Sessions will involve a mix of instructor presentations and case study work, with supporting classroom discussions.

Assessment of performance will be through delegate-completed portfolio of work. The final course outcome is a college-issued “Hospitality Management” Course Certificate of Completion.
